Open up the File and click ';Save As'; Then Select JPG. But I think it depends on the Version of Acrobat. I have 6.0, so I know it works on that.
PDF isn't an image format, you can't just convert it into an image like that. Instead, open the PDF file, make a screenshot by pressing the print key, open any image editor (like paint), then right click and select copy in the image section. Save the image as a JPG file (cut of unneeded parts). Done.
If you manage to convert it, you will loose quality. If you scanned it once, why not just rescan it as a JPG?
